Hot-smoked Salmon Tart

This is so yummy; the filling (minus the eggs) can be prepared in advance and used on sourdough toast for a yummy lunch. You could even toast sourdough bread, cut into triangles, place a teaspoon of the filling on top with fresh parsley as a garnish, and serve as an hors d’oeuvre. Both the pastry and the filling can be made ahead of time and refrigerated ready to bake. This is an outstanding tart to serve while entertaining. 

Ingredients

PASTRY

  • 2 cups white spelt four, plus a little extra for rolling
  • 170 g cold butter
  • 1 egg yolk
  • 1 tbsp icy cold water (you may not need this)
  • ½ tsp salt

FILLING

  • 4 eggs
  • ¾ small jar Horseradish sauce (around 1/3 cup)
  • 500 g sour cream
  • 45 tbsp small capers
  • freshly ground pepper
  • bunch of fresh parsley, finely chopped
  • 200 g hot-smoked salmon

TOPPING

  • parmesan cheese, finely grated

Method

  1. Place flour, salt and butter into a food processor, and blend until it has a breadcrumb-like texture.
  2. Add the egg yolk, and process until it forms a dough. If needed, you can use a little icy cold water to form a ball.
  3. Remove from the processor, roll into ball, cover in plastic wrap, and refrigerate for 30 minutes or so.
  4. Roll out to about ¾ cm thick. 
  5. Grease a 30 cm glass pie dish with butter.
  6. Place the pastry onto the pie dish, and poke holes in the base with a fork.
  7. Cover with baking paper and blind bake for 20 minutes at 180°C (355°F), until golden.
  8. While the pastry base is cooking, mix together in a bowl the eggs, horseradish sauce, and sour cream.
  9. Add the capers and parsley to the mixture. 
  10. Flake the salmon (do not over flake it; leave some small bite-sized pieces), and stir into the filling.
  11. Pour the filling into the baked piecrust and cover well with finely grated parmesan cheese and fresh pepper. 
  12. Bake at 150°C (300°F) for 40–45 minutes until golden and set in the middle. 
  13. Serve warm. 

If you are serving to guests for lunch, you may want to pile rocket on top and drizzle with lemon juice and a small amount of olive oil.
