Cauliflower Pizza
Ingredients
BASE
- 1 onion, chopped into chunks
- 1 tsp garlic powder
- 3 tbsp fresh pizza herbs (optional)
- 3 tbsp coconut flour
- 1 tsp xanthan gum (optional, mixed into the coconut flour)
- 1 tsp salt
- 1 cup mozzarella cheese
- 2 small eggs (or 1 large)
TOPPING
- Zito tomato paste
- ½ cup diced mushrooms
- ½ green capsicum
- 1/8 cup diced jalapeno peppers
- 1 cup mozzarella
- 6 rashers of free-range bacon, cut into pieces, raw
- 2 tbsp dried oregano
Method
- Place the cauliflower into your food processor and whizz until it resembles rice. Don’t over process, or it will puree!
- Add the onion, and whizz until it combines but doesn’t juice!
- In a large pan, heat some olive oil and stir-fry the cauliflower and onion mixture along with the fresh herbs on medium heat. Continue to stir.
- Once the cauliflower has cooked and is soft (about 10 minutes), place the mixture into a mixing bowl, and combine well with remaining ingredients.
- Line a shallow baking dish with baking paper and firmly spread the mixture on top until it's about 2 cm thick.
- Bake in a preheated 200°C (390°F) oven for 20 minutes, or until golden around the edges. (NOTE: It’s best cooked on a hot pizza stone if you have one.)
- Remove from the oven, and then turn the oven up to its hottest temperature while you prepare your toppings.
- Place a layer of tomato paste over your base.
- Top with mushrooms, capsicum, jalapeno, followed by the mozzarella.
- Place the bacon on top and sprinkle with the oregano.
- Cook for 8–14 minutes, until the cheese begins to brown.
